
Orange-Scented Beef Stew
Ingredients
- large red onion halved and thinly sliced
- 1 large carrot sliced 1/2-inch thick
- 4 cloves garlic peeled and crushed
- 4 strips orange zest
- 3/4 cup orange juice
- 1/4 cup orange marmalade
- 1 teaspoon sweet paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried thyme
- 1.5 kg beef chuck cut into large chunks
Instructions
- In a slow cooker combine onion, carrot, garlic, orange zest, orange juice, marmalade, paprika, salt, pepper, and thyme.
- Add beef, turning to coat.
- Cook on low for 6 hours or until beef is very tender.
- With a slotted spoon, spoon beef and vegetables onto a platter.
- Place flour in a small saucepan and whisk in pan juices.
- Cook over low until lightly thickened, about 3 minutes.

If you don’t have a slow cooker use a foil covered tray in an oven at 100c.
